During cold winter nights sometimes all I want is some good old fashion soup.
My Husband is an excellent cook and this is his tasty version of basic chicken noodle soup,
adding curry just heats things up a little.
Recipe
Ingredients
One large box of chicken broth
2 to 3 onions diced
4 or 5 stalks of celery diced
4 or 5 carrots diced
1 or 2 cloves of garlic chopped
Salt to taste
Pepper to taste
Curry 1 to 2 teaspoons
3 Tbs of olive oil
Add three Tbs. of oil to you pan and saute your vegetables about 10 minutes.
Rinse your chicken and add it to your pan with the vegetables.
Pour the whole box of chicken broth over your chicken the cover the rest with water
Add your salt, pepper and curry.
Boil for about 1 1/2 hours.
Taste it to make sure you have it just the way you want.
Remove the chicken from the soup.
You might need to add a little more water at this time.
Then take all the chicken off the bone,
returning all of that yummy chicken back to your soup,
bring the soup back to a boil and add your noodles.
Cook noodles for about 7 minutes.
Then eat.
Chicken soup that warms your body and spirit.
