Bananas with Dark Chocolate, Coconut/ Peanut Butter Spread and Toasted Coconut.


 Watching what you eat is probably one of the hardest things to do, especially if you are and on the go and never home.  I am the biggest sweet eater. I always love to have something sweet after I eat a meal.  Giving up sugar was one of the hardest things to do but I knew I had to cut sugar from my diet because it is just plain not healthy.  I needed to make better choices and really after the first few weeks it gets a lot easier.  It seems like your mind gets clearer and you are calmer, not so emotional.  Well that's how it effected me anyway.  Fruit has been my saving grace. I now grab a piece of fruit when I want something sweet and I have to say it works.

There are some days that fruit alone just does not do it.   This little concoction I made up has helped me on those rough days. It is just the right amount of sweet to satisfy me and believe me when you really are needing that little extra decadence this will work.
To date I have lost about 11 pounds and that is something pretty remarkable for me.  I have been trying to get past a certain weight for about 2-3 years and nothing has worked. This little diet I am doing has been the first time I have seen any true weight loss happen and I could not be anymore thrilled. I  have just a few more pounds until I am at my goal weight,  but like I have said before, this is a marathon not s sprint so maybe by Christmas I will have reached my goal.
I really wanted this to be a lifestyle change.
This Peanut Butter, Chocolate Banana with toasted Coconut is delicious
 and satisfying. Eat it as a snack or as an after dinner treat. 
I try and use  Organic Dark chocolate, bananas and coconut when available.
It will definitely help when you feel like grabbing that pint of ice cream.


Ingredients

 One Banana
Coconut peanut spread * Publix and Wal-mat both carry this.
one square of dark chocolate
Toasted Organic Coconut
Plate
Small bowl
Break up the one square of chocolate into a small bowl.
 Heat the chocolate in the microwave for 20 seconds, take it out and  stir it up.
 The heat left in the bowl will slowly melt your chocolate. If it is not melted enough  heat another 10-15 seconds.
 Take it out and stir chocolate until it is completely melted.
 Slice your banana and place them on a plate.
 Scoop out on spoonful of the coconut peanut spread.
 Place the spread it in the warm chocolate and stir until melted
 Take a spoon and drizzle the chocolate peanut butter mixture over the bananas.
 Grab some toasted coconut and sprinkle over top

You can place this yummy treat in the fridge to get cold 
or eat it right away. Mine never lasts very long.
I think children would love this too. Plus it's quick and easy. Make it in advance and have it ready as an after school treat or better yet have the children help you make it,
and eat it together watching a movie.
Now I am going to enjoy this beautiful weather by heading over to spend the day with my family. 
I have a few of my wonderful relatives in town visiting and I wouldn't want to miss seeing them for the world.  The most important thing to me is family and spending time with the people I love. Everyday you can do that is such a blessing.

  1. I love this, and may I add that it's easy and quick, so when you are fighting the urge to eat something sweet you can have this healthy snack instead in no time at all. Great post.
